As reported in the World’s Poultry Science Journal: “…foie gras has been recognized as a non-pathological and non-harmful product”. And research results concerning the welfare aspects of foie gras farming “do not support criticisms of force-feeding and foie gras production”. As foie gras has become increasing popular in many of New York City’s restaurants, foie gras farming has created jobs that provide benefits, pathways to citizenship, and access to the middle class for many families.
